Lunchbox Meal Ideas: Week One

If you’re reading this, we survived week one of preschool!

RJ goes to school 4 days a week, and Elias goes to school 2 days a week. So weekly I’ll be taking shots of what they eat everyday. It’ll be separated by Elias’ meals (which is suited for a picky 2 year old) and RJ’s meal (suited for a living garbage disposal)

Every Sunday I plan their meals for the week, that way when we go grocery shopping,  we get what we need, and planned for instead of walking out of target $300 poorer. After I write up their meals, and purchase everything we need for it, I make it all pretty and print it out to keep on the side of my fridge. I prep their lunches the night before, because come on, I AM NOT a morning person. I have like 20 alarms, just to wake me up.

Elias’ (picky 2 year old) Lunch Day 1:

Entree: Peanut Butter and Jelly Sandwich cut into shapes. I’m no expert at sandwich cutting. But I definitely will get a sandwich cutter because Elias LOVED the shapes.

  • Grapes (which I did cut in half, after I took the picture)

But we love this brand in particular because it has 25% more of the GOOD fat than the other leading peanut butter brand. This was very important to us because Elias is a VERY picky eater, and getting some good fats in his diet is tough. But when he eats his PB&J made with Pic’s Peanut Butter, we have peace of mind! It’s also non GMO, and no added sugar. Because there are no oils added, you have to stir the peanut butter up before you scoop it out the jar.

Next week’s meals are going to have a different look(and less sandwiches), I’m so excited to show you all!! But for now, It’s a surprise!
