Three meals in under 30 minutes

I have put together three meals in under 30 minutes for you all!!! Many of you all know I love to cook, and coming up with new recipes for the kids. I frequently share different (from scratch) rice recipes, but I know those sometimes are very time consuming. When you’re a parent, and trying to do all the things, whether its work from home, keep a house clean, take care of kids, homeschool the kids, and somehow come up with a nutritious meal- I know it can get overwhelming. Believe me, I’ve been there and ended up in a drive thru. But whenever I have a full day of work, I plan ahead and I plan with Success Rice.

Instant rice?!! That’s like a Hispanic/Caribbean household sin. But when you’re a parent of 4 kids, sometimes you just have to save on time. But just because I’m saving on time, doesn’t mean I’m skipping out on flavor or nutrition.

In this blog post, I am going to share THREE recipes made with Success Rice that was prepped and cooked in under 30 minutes!! Yes, I said 30 minutes. First is Cheesy Broccoli Rice Casserole, Next is Spicy Sausage and Pepper Rice, and last is a Taco Bowl. I hope this blog post helps you out with mealtime, and saves you some time!!

Three Meals in under 30 minutes

Recipe #1:

Cheese Broccoli and Rice Casserole 

I waited too long to take a picture of this dish after I took it out of the oven, but I swear it is so yummy!! This one is my kid’s favorite because it combines all of their favorite things: cheese, broccoli and rice!! From start to finish, this dish takes 30 minutes. but 15 minutes of it involves being in the oven so really it’s only 15 minutes of effort on your end. For this recipe, I went with Success White Rice!! I get the perfect bag of fluffy white rice in under 10 minutes!

Cheesy Broccoli and Rice Casserole

My kids are obsessed with 3 things, rice, cheese and broccoli. So I combined their 3 favorites and made a yummy casserole that always has them asking for seconds.

  • 2 bags Success White Rice
  • 1 bag Steam in bag Broccoli Florets
  • 2 8oz Shredded Sharp Cheddar Cheese
  • 1 8oz Cream Cheese
  • 1 Onion
  • 4 tbsp Salted butter
  • 1 paprika use as much/little as you want
  • 1 Cheyenne Pepper use as much/little as you want
  • 1 crushed red pepper use as much/little as you want
  • 1 onion powder use as much/little as you want
  • 1 garlic powder use as much/little as you want
  • 1 salt use as much/little as you want
  • 1 pepper use as much/little as you want


  • Read the instructions on the box of success rice so you know how to cook it. I cooked it on the stove (following the directions on the box)
  • While rice is cooking, preheat oven to 350, then melt half a stick of butter on medium high heat, and sauté onions until translucent 
  • Add cream cheese and steamed broccoli florets to the pan 
  • Add finish success rice to the same pot and mix 
  • Add your seasonings (paprika, Cheyenne pepper, onion powder, garlic powder, salt, pepper, crushed red pepper). after mixing, get a small spoon and have a taste. Add more seasonings if need be. Then add 80z (1 bag) of shredded cheddar cheese. 
  • Once mixed well, transfer to an oven safe glass dish
  • Top with an extra 8oz (1 bag) of shredded cheddar cheese. 
  • Bake uncovered for 15 minutes. Once done baking, allow it to rest for 10 minutes. 

Recipe #2: 

Spicy Sausage and Pepper Rice 

This recipe is mine and my husband’s favorite. Although it’s labeled spicy, it’s really only as spicy as you decide to make it. Whenever I’m cooking for just us 2, I add extra Cayenne Pepper and crushed red pepper, when the kids are eating from it too, I ease up a bit, however they love spicy food just as much as me! Why I love the dish is because it packs a punch. It is filled with so much flavor and is filling!

We used Success Jasmine Rice, which gives you the perfect soft, fluffy and aromatic Jasmine Rice in under 10 minutes!

Spicy Sausage and pepper rice

  • 2 bags Success Jasmine Rice
  • 4 TBSP Sofrito
  • 1/2 whole Onion (white or sweet)
  • 1/2 whole Orange Bell Pepper
  • 1/2 whole Yellow Bell Pepper
  • 1/2 whole Beef Smoked Sausage
  • 1/2 packet Sazon Goya
  • 2 tbsp Cayenne Pepper
  • 2 tbsp Crushed Red Pepper
  • 2 tbsp Black Pepper and Pepper
  • 2 tbsp Paprika
  • 2 tbsp Onion Powder
  • 2 tbsp Garlic Salt
  • 6 tbsp Cooking oil I used vegetable oil


  • Read the instructions on the Success Rice box, and get your Success Jasmine Rice cooking
  • Dice your beef sausage however small you want
  • Dice up your bell peppers and Onion into 1 inch slices
  • Heat up oil on stove (medium high heat) and add sofrito to the pan. 
  • Start cooking sausage until fully cooked and crispy. I had a lot of oil in my pan that I then poured into a separate container and used later. You can do this too if you want!
  • Once sausage is fully cooked, add diced peppers and onions. Add your seasonings (paprika, Cheyenne pepper, sazon Goya, crushed red pepper, onion powder, garlic salt, salt, and pepper) Cook onions until translucent.  
  • Add cooked jasmine rice to the pot and mix! 
  • Let it sit in the pot for an additional 5 minutes, and add in extra sauce (that you saved from earlier while cooking the sausage) 
  • Serve and Enjoy!! 

Recipe # 3:

Taco Bowls

This is probably the easiest and most simplest of the recipes, because you can make it any way you want! But it’s easily one of our favorites simply because the kids have freedom to customize it any way! We used Success Brown Rice, which is 100% whole grain boil-in-bag brown rice! So you get the perfect bowl of brown rice, every time. And ig you’ve ever made brown rice before, you know that’s difficult to achieve.

Taco Bowls

This one is probably the simplest of the 3 recipes, but its easily one of my favorites because its total customizable to your own liking. This recipe is exactly how my family likes eating it!! Feel free to add or remove whatever you want.

  • 1 bag Garden Salad Blend
  • 1 bag Success Brown Rice
  • 1 pound Ground Beef
  • 1 8 oz Mexican Shredded Cheese
  • 1 8 oz Sour Cream
  • 1 can Refried beans (or whatever kind you like)
  • 1/2 whole Avocado
  • 1/2 whole Bell Pepper, diced
  • 1/2 whole Onion , diced
  • 1 packet Taco Seasoning
  • 1 pack Tortillas


  • Cook your Brown Success Rice according to the instructions on the box 
  • Sautee your onions and bell peppers until your liking, and set aside in a separate bowl. 
  • In that same pan, cook your ground beef and season with a packet of Taco Seasoning 
  • Once Ground Beef is fully cooked and crispy, assemble your taco bowl! 
  • I use a regular cereal bowl, put a flower tortilla at the bottom and start layering my toppings in this order- tortilla>refried beans>brown rice>ground beef> sautéed onions and bell peppers> lettuce> sour cream> salsa> cheese>avocado
